In a separate bowl, crack the 2 eggs and whisk them well with a fork or chopsticks. Then, add the warm cooked rice and gently mix everything together with a spatula or spoon, ensuring each grain of rice is coated with the egg mixture. The key to a tender texture is to mix the rice as if you’re ‘mixing rice with egg’ in the bowl, rather than scrambling the eggs directly in the pan.
