How to Make a Delicious Omelet Using Leftover Fried Rice
Cleverly use up leftover rice by making a simple and satisfying omelet! This recipe is perfect for a quick and easy meal.
Omelet Ingredients- 1 serving of well-cooked fried rice
- 3-4 fresh eggs
- Sweet ketchup, to taste
- 1 slice of processed cheese
- Warm cream soup (optional)
Fried Rice Ingredients- 1 bowl of leftover rice
- Diced green beans or cucumber, as needed
- 5-6 plump cocktail shrimp
- 1 fresh egg (for fried rice)
- Diced carrot, as needed
- 1/4 diced onion
- Tuna or ham, as needed (optional)
- Salt, to taste
- Pepper, to taste

Cooking Instructions
Step 1
Let’s start by making delicious fried rice! Finely chop any vegetables you have in your refrigerator. Adding cocktail shrimp will enhance the flavor wonderfully. Add the leftover rice and stir-fry until all ingredients are well combined. Season simply with salt and pepper for a delicious fried rice base!

Now, let’s get started on the omelet. Lightly heat a non-stick skillet over medium-low heat and add a generous amount of oil. Whisk 3-4 eggs until smooth and pour them into the pan, spreading to create a thin omelet. Cooking slowly over low heat will result in a wonderfully tender texture.

Once the egg is partially set, it’s time to add the fried rice. You can add the fried rice when the egg is still a bit runny, or like me, gently flip the omelet over and place the fried rice on top for a more stable shape.

Place the fried rice on about half of the omelet. Fold the other half of the omelet over to create a half-moon shape. For an extra layer of richness, you can place a slice of cheese on top of the fried rice before folding the omelet over.

Worried about the fried rice spilling when transferring the omelet to a plate? Instead of using the pan lid, place your serving plate over the skillet and carefully invert the pan. The omelet will naturally slide onto the plate, looking beautifully presented. Arrange some fresh lettuce leaves on the plate before placing the finished omelet on top.

Finally, add some pickled red onions on the side to complement the omelet’s flavors. Since this is a homemade omelet, a drizzle of sweet and tangy ketchup is the perfect finishing touch instead of a fancy sauce. Serving with warm cream soup makes for an even more hearty and satisfying meal!
