Ingredients

  • 1 Dried Pollack (Hwangtae)
  • 3 Tbsp Cooking Oil
  • 2 Tbsp Soy Sauce (Jin-ganjang)
  • 1 Cheongyang Pepper
  • 2 Stems Scallions
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Ginger Syrup
  • 1 Tbsp Perilla Oil (Deulgireum)
  • Pinch of Black Pepper
  • Pinch of Sesame Seeds

Cooking Instructions

Step 1

First, prepare the dried pollack. Trim off the head and tail, and carefully cut away the fins with scissors. This makes it easier to handle and eat.

Step 1

Step 2

Lightly dampen the prepared pollack under running water. Then, make 2-3 shallow cuts along the back. This helps prevent the pollack from curling up too much when it’s pan-fried, keeping its shape nice and appealing.

Step 2

Step 3

Gently pat the pollack dry with paper towels, pressing down to remove excess moisture. If it’s too wet, oil can splatter during cooking, and the pollack might not get crispy.

Step 3

Step 4

Heat 3 tablespoons of cooking oil generously in a frying pan over medium-low heat. Place the dried pollack in the pan and pan-fry it until golden brown on both sides. Cook slowly to avoid burning.

Step 4

Step 5

While the pollack is cooking, let’s make the seasoning sauce. In a small bowl, combine finely chopped scallions, Cheongyang pepper, minced garlic, and ginger syrup. The Cheongyang pepper adds a nice spicy kick, and the ginger syrup provides a unique sweetness and aroma.

Step 5

Step 6

Add a pinch of black pepper to the sauce. This helps cut through any richness and adds a wonderful aroma, enhancing the overall flavor. Using freshly ground pepper is recommended.

Step 6

Step 7

Now, add 2 tablespoons of soy sauce for a savory depth of flavor. Jin-ganjang (Korean soup soy sauce) will add a rich taste to the dish.

Step 7

Step 8

Finally, add 1 tablespoon of perilla oil for a nutty and rich aroma. Perilla oil will further enhance the pollack’s delicious flavor.

Step 8

Step 9

Mix all the sauce ingredients together thoroughly until well combined. This creates a delicious seasoning sauce. Having the sauce pre-made makes it easy to coat the pollack immediately after frying.

Step 9

Step 10

Arrange the nicely pan-fried pollack on a serving plate. Generously spoon the prepared seasoning sauce over the top. You can create such an impressive dish at home with ease! This simple yet flavorful grilled dried pollack is highly recommended. Give it a try!
