Simple & Healthy Oatmeal Banana Bread

Create a wholesome banana bread that’s not overly sweet, featuring the subtle sweetness of bananas and the nutty flavor of oatmeal. This recipe is a great way to use up leftover bananas and reduce food waste, using simple ingredients that anyone can easily follow.
Basic Ingredients- 1 cup rolled oats
- 2 large eggs
- 2 ripe bananas
- 2g baking soda (approx. 1/2 tsp)
- 0.5 Tbsp olive oil (approx. 7ml)

Cooking Instructions
Step 1
First, prepare all your ingredients. Using very ripe bananas, those with black spots on the peel, will result in a sweeter and softer bread. For the eggs, take them out of the refrigerator beforehand so they are at room temperature, which helps the batter mix smoothly without clumping.
Step 2
Using a blender, grind the rolled oats into a fine powder. This step will make the bread softer and more moist. (You can also use pre-made oat flour.)
Step 3
In a blender bowl, combine 1.5 of the peeled bananas, the 2 room-temperature eggs, the ground oat flour, baking soda (2g), and olive oil (0.5 Tbsp). Blend until all ingredients are smoothly combined. Adding a little olive oil will enhance the bread’s tender texture. (Baking powder can also be used as an alternative.)
Step 4
Slice the remaining 0.5 banana thinly. Arrange these banana slices at the bottom of the baking dish. This way, after baking, you’ll have delicious banana pieces embedded in the bread.
Step 5
Carefully pour the prepared banana-oat mixture over the sliced bananas in the dish. For added flavor and texture, feel free to mix in chopped nuts (like walnuts or almonds) or dried fruits.
Step 6
Cover the dish with plastic wrap and poke a few holes in the wrap using a fork or toothpick. This allows steam to escape during cooking, ensuring the bread bakes properly. Microwave for 4 minutes initially. After 4 minutes, check the bread’s doneness and microwave for another 2 minutes if needed. (Cooking time may vary depending on your microwave’s wattage, so check periodically.)
Step 7
To check if the bread is fully cooked, insert a skewer or toothpick into the center of the bread. If it comes out clean with no batter attached, it’s ready! It’s delicious served warm right away, or after letting it cool slightly.
