Simple Homemade Pickled Radish Wraps (Ssammu)

Made with seasonal winter radish, you can prepare a generous batch and store it in the refrigerator for a fresh taste anytime. This recipe is adapted from the popular ‘Baek’s Cucumber Pickle’ for an even easier and tastier result.
Main Ingredients- Radish 2/3 (medium size)
Pickling Brine- Sugar 1 cup
- Vinegar 1 cup
- Water 1 cup
- Salt 1 tsp

Step 1
First, thoroughly wash the radish you will be using. You can adjust the size of the radish according to your preference, and you can also slice it into thin rounds or long strips for the ssammu. Using a mandoline slicer will help you achieve thin and uniform slices, making the process more convenient. The thinner the slices, the better they will absorb the flavors.
Step 2
Now it’s time to make the pickling brine that will give the ssammu its delicious flavor. In a pot, combine 1 cup of sugar, 1 cup of vinegar, 1 cup of water, and 1 teaspoon of salt, and bring it to a boil without stirring.
Step 3
Once the brine starts to boil, resist the urge to stir. Simply wait until it reaches a rolling boil.
Step 4
When the brine is boiling vigorously, pour it immediately over the sliced radish in a clean container. It’s helpful to press down the radish with sterilized weights or a heavy plate to keep it submerged. Once it cools down at room temperature, your delicious ssammu will be ready to eat!
Step 5
After the ssammu has completely cooled, transfer it to a clean, sterilized glass jar. Storing it in the refrigerator will keep it fresh for a longer period. Enjoy it with your favorite meat dishes or as a refreshing side for vegetable wraps!
