Main Ingredients- 2 cups cooked rice (warm is best)
- 14 pcs cocktail shrimp (thawed and drained)
- 3 eggs
- 1/3 carrot (finely diced)
- A small amount of green onion (chopped)
Seasoning- 1 Tbsp oyster sauce
- Pinch of salt
- Pinch of black pepper

Cooking Instructions
Step 1
First, rinse and thaw the frozen cocktail shrimp under cold water. Pat them thoroughly dry with paper towels. Finely dice or julienne the 1/3 carrot and finely chop the green onion. Prepping your ingredients beforehand will significantly speed up the cooking process.
Step 2
Crack the 3 eggs into a bowl. Gently whisk them with a fork or whisk until well combined, being careful not to create too much foam. Whisking gently will result in a tender scrambled egg texture in your fried rice.
Step 3
Heat a pan over medium heat and add a generous amount of cooking oil. Add the chopped green onions and stir-fry until fragrant to make scallion oil (①). Then, add the diced carrots and stir-fry briefly (②). Push the vegetables to one side of the pan, then pour in the whisked eggs into the empty space (③). As the eggs begin to set, gently scramble them with chopsticks or a spatula until they form soft curds (④). Finally, add the drained cocktail shrimp and stir-fry until they turn pink and are just cooked through. Be careful not to overcook the shrimp, as they can become tough.
Step 4
When the cocktail shrimp are pink and cooked, add the 2 cups of warm cooked rice. If you are using cold rice, microwave it beforehand to prevent clumping and ensure fluffy fried rice.

Using a spatula or spoon, gently mix and stir-fry the rice with all the ingredients. Be careful not to mash the rice grains. The goal is to coat each grain of rice with the flavorful ingredients.

Add 1 tablespoon of oyster sauce to the side of the pan. Adding it around the edges allows the sauce to caramelize slightly, enhancing its flavor.

Stir-fry again to ensure the oyster sauce is evenly distributed with the ingredients. Finally, season with a pinch of salt and pepper to taste. Remember that oyster sauce is already seasoned, so taste as you go to achieve your desired flavor level.
