Main Ingredients
- 300g Joraengi Tteok (small, chewy rice cakes)
- 15g Dallae (Korean wild chives)
Tteokbokki Sauce
- 400ml Water
- 1 Tbsp Gochujang (Korean chili paste)
- 1.5 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Brown Sugar
- 1 Tbsp Corn Syrup (or rice syrup)
- 1 Tbsp Cooking Oil
- 0.5 Tbsp Soy Sauce
- 400ml Water
- 1 Tbsp Gochujang (Korean chili paste)
- 1.5 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Brown Sugar
- 1 Tbsp Corn Syrup (or rice syrup)
- 1 Tbsp Cooking Oil
- 0.5 Tbsp Soy Sauce
Cooking Instructions
Step 1
Start by preparing all your ingredients. Gently wash the wild chives and pat them dry. If your Joraengi tteok is frozen, begin the thawing process.
Step 2
If using frozen Joraengi tteok, soak them in lukewarm water for about 30 minutes until they become soft and pliable. This helps the rice cakes absorb the sauce better and achieve a delightful chewy texture.
Step 3
Clean the wild chives thoroughly. Remove any yellowing or wilted leaves and trim the roots. Gently peel off the outer skin of the root bulbs if necessary. Rinse them under running water, paying attention to cleaning the soil from the roots.
Step 4
Cut the cleaned wild chives into short pieces, roughly the same length as the Joraengi tteok. This ensures they mix well with the rice cakes and evenly distribute their fresh, aromatic flavor.
Step 5
Now, let’s prepare the tteokbokki sauce. In a pan, combine the water, soy sauce, gochujang, gochugaru, brown sugar, corn syrup, and cooking oil. Stir everything together until well combined.
Step 6
Add the soaked Joraengi tteok to the pan with the prepared sauce.
Step 7
Bring the mixture to a boil over medium heat. Once it’s bubbling, let it simmer for about 5 to 8 minutes, allowing the rice cakes to absorb the delicious sauce. Stir occasionally to prevent the tteok from sticking to the bottom of the pan.
Step 8
As the tteokbokki thickens and the sauce coats the rice cakes beautifully, add the chopped wild chives. Gently toss them in, and cook for just a minute or two. Adding them at the end preserves their fresh, slightly pungent aroma and vibrant green color.
Step 9
Turn off the heat. Give the tteokbokki a final stir using the residual heat. Your delicious and fragrant Joraengi Tteokbokki with Wild Chives is now ready to be enjoyed! Serve immediately while warm.
