  • 50ml Soy Sauce
  • 50ml Mirin (or cooking wine)

Cooking Instructions

Step 1

Carefully separate the egg whites from the yolks. For this recipe, we will only be using the egg yolks. Gently crack the eggs and allow the whites to drain completely, ensuring the yolks remain intact and unbroken.

Step 2

In a small bowl or measuring cup, combine 50ml of soy sauce and 50ml of mirin. Mirin adds a subtle sweetness and depth of flavor, balancing the saltiness of the soy sauce. Stir these two liquids together until well blended.

Step 3

Gently place the separated egg yolks into the prepared soy sauce and mirin mixture. Try to ensure the yolks are submerged or at least covered by the liquid to allow them to marinate evenly.

Step 4

Cover the container tightly with a lid or plastic wrap and refrigerate. Let it marinate for at least 6 hours, or preferably overnight. This resting period will transform the yolks into a firm yet melt-in-your-mouth texture, infused with savory flavor.

Step 5

Serve the marinated egg yolks over a bowl of warm rice. For an extra burst of flavor, mix with a drizzle of sesame oil, a sprinkle of toasted sesame seeds, and shredded seaweed (gim).
