Main Ingredients

  • 2 ripe tomatoes
  • 2 fresh eggs
  • 2-3 cloves garlic, thinly sliced
  • 1/4 onion, thinly sliced
  • Pinch of salt
  • Pinch of black pepper (or herb salt)
  • A little grapeseed oil (or cooking oil)

Cooking Instructions

First, wash the tomatoes thoroughly. Cut them into bite-sized pieces, about 6-8 wedges if large, or 6 if medium-sized. Thinly slice the onion and mince or slice the garlic. In a separate bowl, crack the eggs, add a pinch of salt and pepper, and whisk until well combined.

Heat a generous amount of grapeseed oil (or your preferred cooking oil) in a pan over medium heat. Add the sliced garlic and sauté until fragrant, being careful not to burn it. Then, add the sliced onion and stir-fry until it becomes translucent. Finally, add the cut tomatoes and stir-fry them gently until they start to soften slightly. Don’t overcook the tomatoes; you want them to retain some of their fresh flavor.

Push the sautéed ingredients to the sides of the pan, creating a well in the center. Carefully pour the whisked egg mixture into the empty space. After about 5 seconds, once the bottom of the egg starts to set, season lightly with salt and pepper (or herb salt). Using a spatula or chopsticks, gently scramble the eggs, breaking them up and mixing them with the other ingredients until everything is well combined. Your delicious and healthy stir-fry is ready!
