Simple Oyster Sauce Stir-Fried Eggplant Rice Bowl

We’ve made a super simple stir-fried eggplant rice bowl using seasonal eggplants. This dish is quick to prepare and packed with flavor!

Main Ingredients

  • 1 Eggplant (medium size)
  • 1/4 Red Bell Pepper
  • 1/2 Onion
  • 1/3 Green Onion

Sauce Ingredients

  • 1 Tbsp Minced Garlic
  • 1/2 Tbsp Sesame Oil
  • 1 Tbsp Oyster Sauce
  • 1 tsp Gochugaru (Korean chili powder)
  • 1/2 Tbsp Sugar
  • 5 Tbsp Water

Cooking Instructions

Step 1

First, wash the eggplant thoroughly. Cut it in half lengthwise, then slice into half-moon shapes about 0.7cm thick. Finely chop the bell pepper (removing seeds) and the onion. Slice the green onion as well.

Heat 1-2 tablespoons of cooking oil in a pan over medium-low heat. Add the sliced green onions and stir-fry for about 1 minute until fragrant. This step infuses the oil with a delicious green onion aroma.

Once the green onions are fragrant, add the chopped bell pepper and onion. Stir-fry over medium heat until the vegetables are slightly softened.

When the vegetables are partially cooked, add 1 tablespoon of minced garlic. Stir-fry for about 30 seconds until the garlic is fragrant. Be careful not to burn the garlic by adjusting the heat.

Now it’s time to add the eggplant. Add the sliced eggplant to the pan and stir-fry with the other vegetables until well combined. Eggplants shrink as they cook, so don’t worry if it looks like a lot initially.

Once all ingredients are mixed, add all the sauce ingredients: 1/2 Tbsp sesame oil, 1 Tbsp oyster sauce, 1 tsp gochugaru, and 1/2 Tbsp sugar. Pour in 5 tablespoons of water. Increase the heat to medium-high and stir-fry for 2-3 minutes until the sauce thickens and the eggplant becomes tender and moist. If the sauce becomes too dry, add a little more water.

The stir-fried eggplant is ready! For an extra touch, sprinkle some toasted sesame seeds on top if desired. It’s incredibly simple but tastes wonderfully satisfying.
