  • 1/4 zucchini
  • 1/2 tomato
  • 2 button mushrooms
  • 2 strips bacon
  • 1/2 cup shredded pizza cheese
  • 5 Tbsp tomato sauce

Prepare all your vegetables and bacon by chopping them into bite-sized pieces suitable for pizza toppings. Finely julienne the onion and bacon. Slice the zucchini, tomato, and button mushrooms into your desired shapes. Prepping your ingredients beforehand will make the cooking process much smoother.

In a wide bowl, crack the 4 large eggs. Add 1 Tbsp of cooking wine (mirin), a pinch of salt, a pinch of black pepper, and 1 Tbsp of cornstarch to help bind the mixture and give it a smoother texture. Whisk everything together with a fork or whisk until well combined. The cornstarch will help the egg base set nicely without breaking apart when cooked.

Lightly grease a frying pan with a little cooking oil and heat it over medium-low heat. Pour the entire egg mixture into the pan, tilting it so the egg spreads evenly to form a relatively thick base. Reduce the heat to low, cover the pan with a lid, and let the egg cook until it’s about half set, which usually takes about 3-4 minutes. Be careful not to cook over high heat, as the bottom might burn before the top is cooked.
