Super Easy Late-Night Snack: Delicious Pizza Toast Made in a Snap
Feeling peckish late at night, or craving a simple snack? Bake your bread until wonderfully crisp and top it with a generous amount of delicious pizza toast! The combination of mushrooms, egg, and cheese is simply divine.
Main Ingredients- A handful of oyster mushrooms (approx. 50g)
- 2 fresh eggs
- Plenty of mozzarella cheese (approx. 50-70g)
Sauce & Seasoning- 1 tsp minced garlic
- Approx. 2-3 Tbsp store-bought spaghetti sauce or tomato sauce
- A little olive oil (for cooking)

Cooking Instructions
Step 1
First, prepare the oyster mushrooms. Rinse them lightly under running water, pat dry, then tear or slice them into bite-sized pieces. Place the mushrooms in a pan and lightly sauté to remove excess moisture. (This step is optional but improves the mushroom’s texture.)
Step 2
Crack the 2 fresh eggs into a bowl. Add the prepared mozzarella cheese and 1 tsp of minced garlic. Lightly whisk everything together until combined. (You can also tear the cheese into smaller pieces by hand.)
Step 3
Prepare the bread slices that will form the base of your pizza toast. You can trim the crusts if you prefer.
Step 4
Heat a medium-sized pan over low heat and add a little olive oil. Pour in the sautéed mushrooms and the egg mixture. Cook slowly over low heat, stirring gently to prevent the egg from burning.
Step 5
Once the egg mixture begins to set, add another 1 tsp of minced garlic for extra flavor. Sauté until fragrant.
Step 6
Before the egg is fully cooked, reduce the heat to very low. Cover the pan briefly to allow the mozzarella cheese to melt, or gently mix the ingredients in the pan until the cheese is melted and the egg is cooked to your liking. (You can cook the egg scrambled or leave it slightly undercooked for a runnier texture.)
Step 7
Remove the cooked egg, mushroom, and cheese topping from the pan, or leave it in the pan. (Removing the topping may make it easier to toast the bread.)
Step 8
Now, prepare your spaghetti sauce or tomato sauce. Measure out the amount you’ll need into a separate bowl.
Step 9
Reheat the same pan over low heat and add a little olive oil. Pour in the spaghetti sauce and stir briefly, then place the bread slices in the pan. Toast one side of the bread until it’s lightly browned with the sauce. Turn off the heat, flip the bread, so the sauced side faces up.
Step 10
Generously spoon the prepared egg, mushroom, and cheese topping onto the sauced side of the bread. Serve immediately while warm to enjoy the delightful contrast between the crispy bread and the moist topping. Enjoy your delicious pizza toast!
