Main Ingredients
- 800g Pork Back Ribs (approx. 2 packs)
- 1/4 head Well-fermented Kimchi
- 1 cup Kimchi Brine
- 2 cups Water
Seasoning Ingredients
- 1 Tbsp Whole Garlic (or 1 Tbsp minced garlic)
- 1 Tbsp Soy Sauce
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Sesame Oil (or Olive Oil)
- A pinch of Black Pepper
- 1 Tbsp Whole Garlic (or 1 Tbsp minced garlic)
- 1 Tbsp Soy Sauce
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Sesame Oil (or Olive Oil)
- A pinch of Black Pepper
Cooking Instructions
Step 1
Soak the pork back ribs in cold running water for about 30 minutes to remove any blood. Alternatively, you can skip this step if you prefer. If you’re concerned about the smell, blanch the ribs in boiling water for a few minutes, then rinse them under cold water. I chose the blanching method to ensure a cleaner taste.
Step 2
Make 2-3 shallow cuts into the thicker parts of the blanched back ribs with a knife. This helps the ribs absorb the flavors more deeply, making them more delicious. Your ribs are now ready for cooking!
Step 3
In a bowl, combine 1 cup of kimchi brine with 2 cups of water. Add 2 Tbsp of gochugaru, 1 Tbsp of garlic (or garlic powder), a pinch of black pepper, and 1 Tbsp of soy sauce to create the base seasoning broth. This mixture will enhance the kimchi’s savory notes and create a rich, slightly spicy broth.
Step 4
Arrange the blanched back ribs in the bottom of a pot. Pour the prepared seasoning broth evenly over the ribs. Ensure there’s enough liquid to generously cover the ribs and kimchi, allowing them to simmer and tenderize beautifully.
Step 5
Drizzle 2 Tbsp of sesame oil (or olive oil) over the ribs. The oil will help tenderize the meat and add a wonderful nutty aroma, making the ribs even more succulent and flavorful.
Step 6
Finally, add the chopped kimchi (about 1/4 head) on top of the ribs. As the kimchi cooks down, it will meld with the ribs, creating an exceptional depth of flavor.
Step 7
Cover the pot and bring to a boil over high heat. Once boiling, reduce the heat to medium-low and let it simmer for at least 10-15 minutes, or until the ribs are tender and the broth has slightly reduced. Basting the ribs with the broth occasionally will help them cook evenly.
Step 8
Voilà! Your pork back ribs and kimchi are perfectly tender and have simmered into a delicious stew. This hearty and flavorful Kimchi Pork Back Rib Stew is ready to be enjoyed with a bowl of steaming rice. Enjoy your meal!
