Simple Rosé Tomato Soup
Easy Rosé Tomato Soup with Tomatoes and Spaghetti Sauce (Perfect for Weekend Brunch!)
Today, we’re making a warm and comforting tomato soup using fresh tomatoes and readily available spaghetti sauce. It’s a fantastic option for a quick and delicious brunch, especially on lazy weekend mornings. You don’t need many ingredients – just tomatoes, spaghetti sauce, some cheese, ham, and onion. The result is surprisingly flavorful and satisfying. Let’s get started!
Ingredients
- 4 medium-sized ripe tomatoes
- 8 tablespoons Rosé spaghetti sauce
- 1 cup (200ml) milk
- 1 onion
- 2 slices cheddar cheese
- 2 slices sliced ham
- 1 tablespoon butter
- 3 pinches of salt
- 2 pinches of black pepper
Cooking Instructions
Step 1
Prepare 4 medium-sized, ripe tomatoes. To easily peel them later, make a shallow cross (+) incision on the bottom of each tomato.
Step 2
Bring a pot of water to a boil. Carefully place the incised tomatoes into the boiling water and blanch for about 20-30 seconds. You’ll know they’re ready when the skins start to loosen. Immediately remove them and rinse under cold water. This makes peeling effortless.
Step 3
Once peeled, cut off the stem end of the tomatoes. Then, cut them in half. Since they will be mashed in the soup, you don’t need to chop them too finely. Cut them into bite-sized pieces.
Step 4
Peel and finely mince 1 onion. Finely chop 2 slices of ham as well.
Step 5
In a pot over medium-low heat, melt 1 tablespoon of butter. Once the butter has melted, add the minced onion and sauté until it becomes translucent and fragrant. This builds a flavorful base for the soup.
Step 6
When the onion is translucent, add the chopped tomatoes to the pot. Use a spoon to mash the tomatoes as you stir and cook them with the onions. Cook until the tomatoes start to break down and release their juices.
Step 7
Once the tomatoes have softened, pour in 8 tablespoons of Rosé spaghetti sauce and 1 cup of milk. (Tip: Using Rosé sauce results in a less acidic and creamier flavor profile compared to regular tomato sauce, which I personally prefer.) Stir everything together to combine well.
Step 8
Add 2 slices of cheddar cheese and the chopped ham to the pot. Continue to stir and simmer until the cheese is fully melted and integrated into the soup. This will add a rich, savory depth to the soup.
Step 9
Finally, season the soup with salt and pepper. It’s best to add these gradually and taste as you go. I used about 3 pinches of salt and 2 pinches of pepper.

Your warm and creamy Rosé tomato soup is ready! Serve it in a bowl and pair it with freshly baked bread or a French roll. It’s a perfect choice for breakfast or a light lunch.
