Ingredients

  • 2 large eggs
  • A small handful of dried anchovies for broth (about 10-15)
  • 3 pieces of dried kelp (about 5cm x 5cm each)
  • 500ml water (approx. 2.5 cups)
  • 5cm white part of green onion
  • 5cm green part of green onion
  • 3cm red chili pepper (optional, for color)
  • A pinch of black pepper
  • 1 tsp coarse sea salt or soy sauce (adjust to taste)

Cooking Instructions

First, let’s make the broth for our delicious egg drop soup. In a pot, combine 500ml of water, several dried anchovies, and 3 pieces of kelp. Bring to a boil over medium heat and simmer for about 10 minutes to extract the deep flavors of the anchovies and kelp. Remember to remove the anchovies and kelp afterwards to ensure a clear broth!

While the broth is simmering, let’s prepare the garnishes. Cut the white and green parts of the green onion into 5cm lengths. Prepare a 3cm piece of red chili pepper; it adds a nice color to the soup (you can omit this if you prefer it less spicy or if children will be eating it).

Finely chop the prepared green onions and red chili pepper. Slicing them thinly will help them blend beautifully into the soup.

Crack 2 large eggs into a bowl and whisk them gently until the yolks and whites are well combined. Try not to whisk too vigorously to avoid creating too much foam.
