Ingredients

  • 1 serving of Udon noodles
  • Water (for boiling udon)
  • 2 cloves of Garlic
  • Olive oil, to taste
  • 1 piece of Mentaiko (spicy cod roe)
  • 1 piece of Butter
  • Scallions or green onions, for garnish (optional)
  • Shredded seaweed (nori), for garnish (optional)

Cooking Instructions

Step 1

Prepare one piece of mentaiko. Carefully slice the skin lengthwise with a knife to open it up. Gently separate the roe from the skin and set the roe aside.

Step 1

Step 2

Finely chop the scallions or green onions. You don’t need a large amount as they are for garnish.

Step 2

Step 3

Peel and finely mince the 2 cloves of garlic.

Step 3

Step 4

Heat olive oil in a pan over medium-low heat. Add the minced garlic and sauté until it turns a light golden brown and becomes fragrant. Be careful not to burn the garlic. This infused garlic oil is key to the dish’s flavor.

Step 4

Step 5

Bring a pot of water to a boil. Add the udon noodles and cook according to the package instructions, usually about 1-3 minutes until tender.

Step 5

Step 6

Once the udon noodles are cooked, drain them and rinse briefly under cold water once or twice. This helps to prevent them from becoming mushy and maintains a nice chewy texture.

Step 6

Step 7

In a serving bowl, place the drained udon noodles. Top with the sautéed garlic oil, the reserved mentaiko roe, and the chopped scallions.

Step 7

Step 8

Add a piece of butter to the bowl on top of the noodles. The residual heat will gently melt the butter, creating a rich sauce.

Step 8

Step 9

For an extra touch of richness, add a single egg yolk to the center of the bowl. You can break it and mix it in for a creamier texture.

Step 9

Step 10

Finally, sprinkle with shredded seaweed (nori) if desired. Mix everything together well and enjoy your delicious Mentaiko Butter Udon!
