Ingredients
  • 1 bowl of cooked rice
  • 2 eggs
  • 1 scallion
  • 3 Tbsp cooking oil
  • 1 Tbsp oyster sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, thinly slice the scallion into approximately 0.3cm thick pieces, separating the white and green parts. Thinly slicing helps distribute the scallion’s fragrance evenly during cooking.

Step 2

Crack the 2 eggs into a bowl. Use a fork or whisk to beat them thoroughly, ensuring the egg whites and yolks are well combined and any stringy bits are broken down. This ensures a smoother texture.

Step 3

Preheat a pan over medium heat, then add 3 Tbsp of cooking oil. Add the sliced scallions and stir-fry until they release their subtle, sweet aroma. Be careful not to burn them.

Step 4

Once the scallions are fragrant, pour the beaten eggs into the pan around the edges. As the eggs begin to set, stir them gently with chopsticks or a spatula, as if making scrambled eggs. Cook until they are just set but still soft and moist.

Step 5

When the eggs are about 70% cooked, add 1 bowl of cooked rice and 1 Tbsp of oyster sauce. Stir-fry everything together, breaking up any clumps of rice, until the ingredients are well combined and heated through.

Step 6

After mixing all ingredients, drizzle in 1 Tbsp of sesame oil. Stir-fry for a few more seconds to incorporate the nutty aroma. Avoid overcooking at this stage, as the sesame oil’s fragrance can dissipate.

Step 7
