Simple Seasoned Spinach
Make Delicious and Easy Seasoned Spinach (Sigeumchi Namul Muchim)
A super simple seasoned spinach dish packed with vitamins, iron, and dietary fiber! Perfect for a quick and healthy side dish.
Main Ingredient
- 1 bunch fresh spinach (approx. 300g)
Seasoning & Other Ingredients
- 1 Tbsp coarse salt (for blanching)
- 2/3 Tbsp minced garlic
- 2 Tbsp chopped green onion
- 0.2 Tbsp salt (or soy sauce, adjust to taste)

Cooking Instructions
Step 1
First, prepare your fresh spinach. Trim off any yellow or wilted leaves. Cut off the very end of the roots, or gently clean them if you prefer to keep them. Wash the spinach thoroughly multiple times under running water to remove any dirt from between the leaves. Drain well.
Step 2
Now, it’s time to blanch the spinach. Bring a pot of water to a rolling boil over high heat. Once boiling, add 1 tablespoon of coarse salt. Adding salt helps maintain the spinach’s vibrant green color and a crisp texture.
Step 3
Carefully add the washed spinach to the boiling salted water. Using chopsticks or tongs, gently stir the spinach for about 10 seconds, just until it wilts slightly. Spinach cooks very quickly, so avoid overcooking it, which can make it mushy. Immediately remove the blanched spinach and plunge it into cold water for 2-3 rinses to cool it down and preserve its crispness.
Step 4
Drain the spinach well after rinsing in cold water. Then, take handfuls of the spinach and squeeze out as much water as possible with your hands. Removing excess water is crucial for a flavorful seasoned dish.
Step 5
Loosen the squeezed spinach. You can chop it into bite-sized pieces on a cutting board if desired, or simply gently separate the strands with your fingers. This ensures the seasoning will be evenly distributed.
Step 6
In a bowl with the loosened spinach, add 2/3 Tbsp minced garlic, 2 Tbsp chopped green onion, 0.2 Tbsp salt (adjust to your taste, you can also use a tiny bit of soy sauce), 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds. Gently mix everything together with your hands, massaging the seasoning into the spinach until well combined. Be careful not to mash the spinach. Taste and add a little more salt if needed. Your delicious seasoned spinach is ready to serve!
