- 1/2 Tbsp minced garlic
- 2/3 Tbsp plum extract (maesilcheong)
- 1 Tbsp sesame oil
- 1/2 Tbsp toasted sesame seeds
- 1 Tbsp chopped green onion
- 1 chopped Korean chili pepper (cheongyang chili)
- 2 Tbsp soy sauce
- 1/2 Tbsp red pepper flakes (gochugaru)
- 1/2 Tbsp minced garlic
- 2/3 Tbsp plum extract (maesilcheong)
- 1 Tbsp sesame oil
- 1/2 Tbsp toasted sesame seeds
- 1 Tbsp chopped green onion
- 1 chopped Korean chili pepper (cheongyang chili)
Cooking Instructions
Step 1
First, slice the 1-pack of soft tofu into uniform pieces, about 1 to 1.5 cm thick. Then, place the sliced tofu slices onto a colander or sieve, arranging them so they don’t overlap too much. This step is crucial for draining out the excess water, which will help achieve a firmer, chewier texture.
Step 2
I happened to have a silicone steamer basket handy, so I used that. Soft tofu is very delicate, so handle it gently to maintain its shape. Carefully lift and transfer the slices onto the steamer basket using a thin spatula. Once arranged without overlapping, sprinkle about 2 pinches of salt evenly over the tofu. Let it sit for approximately 3 hours to allow the moisture to drain out thoroughly. Make sure to place a sufficiently large plate or tray underneath the colander to catch all the draining liquid.
Step 3
You’ll notice water starting to drain from the tofu within just 10 minutes! After a few hours, you’ll be surprised by how much water has been released – you might wonder if tofu contained so much liquid. If you’re short on time or find this draining process a bit tedious, you can skip it. Simply scoop out the soft tofu with a spoon into a bowl, generously top with the prepared seasoning, and enjoy. It’s still incredibly delicious!
Step 4
Having the seasoning ready beforehand makes serving the tofu much easier. Prepare about 1 tablespoon of chopped green onion and 1 Korean chili pepper. Finely mince them with a knife to incorporate them well into the seasoning.
Step 5
Prepare about 1/2 tablespoon of minced garlic. I used 2 small cloves of fresh garlic and minced them right before mixing.
Step 6
In a mixing bowl of appropriate size, combine all the seasoning ingredients as listed below. Add 2 tablespoons of soy sauce, 1/2 tablespoon of red pepper flakes, 1/2 tablespoon of minced garlic, 2/3 tablespoon of plum extract, 1 tablespoon of sesame oil, 1/2 tablespoon of toasted sesame seeds, 1 tablespoon of chopped green onion, and 1 chopped Korean chili pepper. If you’re serving this to children or prefer less spice, you can omit the Korean chili pepper or adjust the amount.
Step 7
Mix all the ingredients thoroughly until well combined. This delicious seasoning is now ready to be served over the drained soft tofu. Enjoy your simple and flavorful soft tofu dish!
