Main Ingredients
  • Shrimp (fresh or thawed) 100g
  • Carrot 1 piece, about 3cm long
  • Onion 1/2 medium
  • King oyster mushroom 1/2
  • Milk 3 Tbsp
  • Canned corn 3 Tbsp

Seasoning & Sauce
  • Curry powder 5 Tbsp (or your preferred type of curry)
  • Store-bought pasta sauce 4 Tbsp (tomato-based)
  • Water 2 Tbsp (for adjusting consistency)

Cooking Instructions

Step 1

First, wash the carrot thoroughly and dice it into 3cm cubes. Place the diced carrots and 2 cups (about 400ml) of water in a pot and bring to a boil over high heat. Once boiling, reduce the heat to medium-low and cook for about 5-7 minutes until the carrots are tender.

Step 2

While the carrots are cooking, trim the stem ends off the king oyster mushrooms, cut them into 2-3 pieces, and then slice them about 1cm thick. Peel the onion and dice half of it into 1cm cubes. Cutting all vegetables to a similar size ensures they cook evenly.

Step 3

Once the carrots in the pot are somewhat cooked, reduce the heat to medium-low. Add 5 Tbsp of curry powder and stir with a ladle or spatula (without any bubbles) to dissolve it completely without clumps. Stir slowly until the curry powder is fully incorporated into the water.

Step 4

When the curry powder is well dissolved, add the sliced king oyster mushrooms and onions to the pot. Drain the canned corn and add it. If using frozen shrimp, rinse them under cold water to thaw, drain well, and add them as well. Bring everything to a simmer and cook until all ingredients are well combined.

Step 5

As the ingredients start to cook, stir in 4 Tbsp of store-bought pasta sauce and 2 Tbsp of water. The pasta sauce will add a delicious umami flavor, making the curry even tastier. Simmer gently, stirring, until the sauce thickens.

Step 6

Finally, turn off the heat. While the heat is off, stir in 3 Tbsp of milk until smoothly combined. Adding milk will make the curry smoother in texture and richer in flavor. Ladle generously over warm rice and enjoy!
