Simple Stir-Fried Chicken with Vegetables

Currently on a fridge-cleaning spree! This recipe uses ingredients I already have at home to whip up a delicious stir-fried chicken dish. It’s incredibly easy, perfect for beginners, and makes great use of store-bought sauces. Load it up with your favorite vegetables for a hearty and healthy meal!

Main Ingredients

  • 1 pack (approx. 600-800g) stir-fried chicken sauce chicken
  • 1/4 head cabbage
  • 1 king oyster mushroom
  • A handful of chives

Seasoning & Aromatics

  • 1/2 stalk green onion
  • 1/2 Tbsp minced garlic
  • A pinch of coarse black pepper
  • 2 pinches salt

Cooking Instructions

Step 1

First, heat a generous amount of grapeseed oil in a pan over medium-low heat. Add the chopped green onions and minced garlic, and stir-fry to create an aromatic green onion oil. You’ll know it’s ready when the green onions turn slightly golden and the garlic becomes fragrant.

Once the green onion oil is fragrant, add the chopped cabbage and stir-fry quickly over high heat. The cabbage will wilt slightly and release its natural sweetness.

Add the sliced king oyster mushrooms and stir-fry them with the cabbage. Once the mushrooms are slightly cooked, season lightly with 2 pinches of salt. Be careful not to add too much salt at this stage.

If you’re using a store-bought stir-fried chicken sauce, rinsing it briefly under running water can help moderate the spiciness. If you prefer it spicier, feel free to use it directly. (Adjust according to your preference!)

Now, add the chicken pieces to the pan and stir-fry quickly over high heat. Searing the chicken until the outside is lightly browned will help lock in the juices, making it even more delicious.

Once the chicken is partially cooked, there’s no need to add more seasoning. Finish by generously grinding coarse black pepper over the dish to enhance the flavor. The pepper aroma will elevate the overall taste of the stir-fry.

Finally, add the washed chives and stir-fry briefly until they are just wilted. Avoid overcooking the chives to preserve their fresh aroma. Just before turning off the heat, drizzle in a little sesame oil for a nutty finish that enhances the overall deliciousness.
