Main Ingredients- 1 medium Potato
- 60g Garlic Scapes
- 50g Anchovy Broth (or water)
Seasoning Ingredients- Pinch of Salt
- 1 tsp Perilla Oil (Deulkireum)
- 1 Tbsp Grapeseed Oil (or cooking oil)
- Pinch of Toasted Sesame Seeds (optional)
- Pinch of Salt

Cooking Instructions
Step 1
First, wash the garlic scapes and cut them into 4-5cm pieces. Peel and wash the potato, then thinly slice it into matchsticks. Soaking the sliced potatoes in cold water for about 5 minutes will remove excess starch, preventing them from sticking together when stir-fried and ensuring a fluffy texture. Drain them thoroughly.
Step 2
Heat 1 tablespoon of grapeseed oil (or other cooking oil) in a pan over medium heat. Add the drained potato matchsticks and stir-fry until they begin to turn translucent and are about one-third cooked. Be careful not to overcook the potatoes at this stage, as they might become mushy.
Step 3
Once the potatoes are partially cooked, add the chopped garlic scapes to the pan and stir-fry together. Cook just long enough to soften the garlic scapes slightly while retaining some crispness. When the garlic scapes are slightly tender, pour in the anchovy broth (or water) and season with salt to taste. Adjust the amount of salt as needed.
Step 4
Continue to stir-fry until all ingredients are well combined and most of the liquid has evaporated. Finally, drizzle in 1 teaspoon of perilla oil and give it a quick mix to add a nutty aroma. Sprinkle with toasted sesame seeds if desired. Your delicious stir-fried potatoes and garlic scapes are now ready to be enjoyed with a warm bowl of rice!
