Main Ingredients

  • 1 Zucchini (approx. 328g)
  • 1 Red Cheongyang Pepper (approx. 7g)
  • 14g Green Onion (white parts primarily)
  • 0.5 Tbsp Minced Garlic

Seasonings and Others

  • 0.2~0.3 Tbsp Fish Sauce (as a substitute for fermented shrimp)
  • 0.3 Tbsp Salt
  • 2 Tbsp Grapeseed Oil
  • 1~1.5 Tbsp Perilla Oil
  • Sesame Seeds (optional)

Cooking Instructions

Step 1

Thoroughly wash the fresh zucchini under running water. Trim off both ends, then cut it in half lengthwise. Slice it into half-moon shapes, about 3mm thick. Avoid slicing too thinly, as this will preserve a pleasant texture after stir-frying.

Step 1

Step 2

Thinly slice the red Cheongyang pepper on an angle to add a touch of spice and color. Finely chop the green onion. Measure out 0.5 tablespoon of minced garlic.

Step 2

Step 3

Place the sliced zucchini and 2 tablespoons of grapeseed oil into a wide stir-fry pan. Cook over medium heat, stirring occasionally, until the zucchini becomes tender and translucent. You’ll know it’s ready when the zucchini turns a deeper shade of green and starts to slightly bend. Stir gently to prevent burning.

Step 3

Step 4

Once the zucchini is partially cooked, add 0.3 tablespoon of salt to season. The zucchini will release some moisture as it cooks, helping the salt to dissolve and flavor the dish.

Step 4

Step 5

Add 0.3 tablespoon of fish sauce to enhance the savory depth, replacing the fermented shrimp flavor. Stir gently to combine. You can adjust the amount of fish sauce according to your preference.

Step 5

Step 6

Add the chopped green onion, minced garlic, and sliced red Cheongyang pepper to the pan. Stir everything together and cook for about 1 minute, or until the garlic becomes fragrant and is cooked through. Turn off the heat. Be careful not to overcook the garlic, as it can burn.

Step 6

Step 7

With the heat off, drizzle in 1 tablespoon of perilla oil to add a nutty aroma. Adding perilla oil at the end helps preserve its delicate fragrance. Start with 1 tablespoon and taste; you can add an additional 0.5 tablespoon if you prefer a stronger perilla flavor.

Step 7

Step 8

Finally, sprinkle some sesame seeds on top. Your delicious and simple stir-fried zucchini without fermented shrimp is now ready! Enjoy it with a warm bowl of rice.
