Simple Tofu Skin Kalguksu
A Healthy and Light Diet Meal: Tofu Skin Kalguksu Recipe
Basic Ingredients- 5 cups broth (homemade anchovy-kelp broth or store-bought)
- 2 sheets of tofu skin (approx. 200-250g)
- 1/2 onion
- 1/3 zucchini
- 1/2 stalk of leek
- 2 Cheongyang peppers (optional, for spiciness)
- 2 Tbsp anchovy sauce (or soy sauce for soup)
- A small amount of carrot
- A small amount of chives
- 1 Tbsp minced garlic
- A pinch of shredded seaweed (for garnish)
- A pinch of sesame seeds (for garnish)
- A pinch of black pepper (for finishing)
Cooking Instructions
Step 1
First, prepare the vegetables that will add flavor to the kalguksu. Thinly slice the onion into strips. Julienne the zucchini and carrot into similar sizes. Slice the leek diagonally and finely chop the Cheongyang peppers after removing the seeds. (Add Cheongyang peppers if you like it spicy.)
Step 2
Thinly slice the delightfully chewy tofu skin into strips, similar to how you would cut kalguksu noodles. Tofu skin can easily become mushy or clump together, so have it ready right before adding it to the dish.
Step 3
Prepare the broth for a refreshing and deep flavor. You can make your own broth using anchovies, kelp, and any leftover vegetables you have in your fridge (like radish or the white parts of leeks), or simply use a store-bought broth for convenience. After making the broth, strain out all the solids to get a clear broth.
Step 4
Once the prepared broth comes to a boil, add the sliced onion, carrot, zucchini, and minced garlic. Let them cook. Once the vegetables begin to soften, add the anchovy sauce to season the broth. (You can substitute or add soy sauce for soup after tasting.)
Step 5
When the vegetables are partially cooked, add the prepared tofu skin, chives, chopped leeks, and Cheongyang peppers. Tofu skin can become soft if overcooked, so boil it for just a short while to maintain its chewy texture.
Step 6
Finally, sprinkle with a pinch of black pepper to your liking, and generously top with shredded seaweed and sesame seeds for a nutty aroma. Your delicious Tofu Skin Kalguksu is ready! It tastes best when served hot.
