  • 3-4 ripe, fresh tomatoes
  • 1/2 bell pepper
  • 5-6 Vienna sausages

Cooking Instructions

Step 1

First, let’s prepare the fresh tomatoes. Make a shallow cross-shaped cut on the top of each tomato. Blanch them in boiling water for about 30 seconds to 1 minute, then rinse under cold water. The skins will peel off very easily. Removing the skin allows the tomatoes to break down smoothly into the sauce, enhancing the flavor.

Step 2

Once peeled, remove the core from the tomatoes and chop them into large pieces. Cutting them this way will retain a pleasant texture from the tomatoes in the sauce, making it even more delicious.

Step 3

Now it’s time to cook the spaghetti noodles. In a generous pot of boiling water with a pinch of salt, cook the spaghetti according to package directions, but remove it about 1 minute earlier for an al dente texture. Drain the noodles, and toss them with a little olive oil to prevent sticking.

Step 4

Heat a frying pan over medium heat and add a generous amount of olive oil. Sauté the minced garlic and sliced onion until fragrant. Once the onion turns translucent, add the chopped tomatoes. Press down with a spatula as you stir to help break down the tomatoes. When the tomatoes have softened a bit, add about 100ml (approx. 1/2 cup) of water and simmer over medium-low heat, stirring occasionally, to create the sauce.

Simmering like this will result in a delicious homemade tomato sauce, preserving the fresh taste and aroma of the tomatoes!

Step 6

Once the sauce is ready, add the cooked spaghetti noodles, sliced Vienna sausages, and bell pepper to the pan with the sauce. Stir-fry everything together. Heat control is key here: start on medium heat, then reduce to low heat once the ingredients are mixed. Stir continuously to ensure the sauce coats the pasta and ingredients evenly, and to prevent sticking.

Step 7

We’re almost there! Pour the prepared tomato sauce over the noodles and ingredients and mix well. For an enhanced aroma, drizzle a little more olive oil and sprinkle with dried rosemary.
