Quick & Easy Tteok-Mandu-Guk: A Satisfying Meal Solution

It’s the fourth Sunday of the month, the supermarket is closed, you’re starving, and all you have are rice cakes and dumplings. What to do? Make Tteok-Mandu-Guk for a hearty Sunday lunch! Here’s a simple and detailed recipe that even beginners can follow.

Main Ingredients
  • 2 servings of tteokguk tteok (rice cake slices for soup, approx. 300g)
  • 4 dumplings (frozen, adjust to your preference)
  • 400ml anchovy broth (or store-bought broth)
  • 1 egg
  • A little green onion, thinly sliced

Cooking Instructions

Step 1

Rinse the tteokguk tteok under cold water and soak them for about 10-20 minutes. If the rice cakes are stuck together, gently separate them.

Step 2

In a pot, combine 500ml of water with an anchovy broth pack (or dried anchovies and kelp). Bring to a boil and simmer for about 10 minutes to create a rich anchovy broth. If you don’t have broth ingredients, using store-bought broth is a convenient option.

Step 3

Once the anchovy broth is at a rolling boil, drain the soaked tteokguk tteok and add them to the pot. Stir gently to prevent the rice cakes from sticking together.

Step 4

As the broth returns to a boil, add 0.5 tsp of minced garlic and the 4 dumplings. Bring back to a boil over high heat, then reduce to medium heat and cook until the rice cakes and dumplings are fully tender.

Step 5

While the tteok and dumplings are cooking, whisk the egg in a small bowl to make egg wash. Lightly oil a non-stick pan over low heat, pour in the egg wash thinly, and cook slowly over low heat until set. This will be your egg garnish. Be careful not to burn it.

Step 6

Once the egg garnish has cooled slightly, slice it into thin strips for garnish.

Step 7

When the rice cakes and dumplings are almost cooked, add 2 tbsp of soup soy sauce for added depth of flavor. Taste the soup and add salt if needed to adjust the seasoning to your preference. Finally, add the thinly sliced green onions and simmer for another minute.

Step 8

Ladle the finished Tteok-Mandu-Guk into a bowl. Artfully arrange the sliced egg garnish on top. For an extra touch of flavor and presentation, sprinkle with shredded seaweed (gim) if desired. Enjoy your delicious meal!
