Quick and Easy Vegetable Porridge with Leftover Rice

Got leftover rice that needs a purpose? This vegetable porridge is perfect for stretching meals when you have more mouths to feed than rice! It’s incredibly simple to make with just a few ingredients. Let’s whip up a delicious and nutritious vegetable porridge in no time using your leftover rice.
Main Ingredients- 1 bowl leftover cooked rice
- 1/2 stalk green onion
- 1/4 small zucchini
- 1 shiitake mushroom
- A little king oyster mushroom
Seasoning- 1/2 Tbsp avocado oil
- 1/2 Tbsp dried shrimp powder
- 1 Tbsp fish sauce
- 1/2 Tbsp avocado oil

Cooking Instructions
Step 1
Heat 1/2 Tbsp of avocado oil in a wide pot over medium-low heat. Add the chopped green onion (about 1/2 stalk) and sauté until fragrant. This step helps to infuse the oil with a subtle onion aroma, which is key for flavor.

Step 2
Prepare the vegetables: finely chop the zucchini (about 1/4 small), shiitake mushroom (1), and king oyster mushroom (a small amount). Add these chopped vegetables to the pot with the sautéed green onions. Stir everything together and cook until the vegetables are slightly tender, allowing their flavors to meld.

Add the leftover cooked rice (1 bowl) to the pot. Use a spatula to break up any clumps and ensure the rice is evenly distributed. Stir in 1/2 Tbsp of dried shrimp powder for an extra savory depth. Now, pour in water to cook the porridge. The amount of water is crucial for achieving your desired consistency: use less water for a thick porridge, and more water for a softer, soupier consistency. I prefer a slightly thicker porridge, so I add a moderate amount of water and let it simmer.

Step 4
Since you’re using pre-cooked rice, it doesn’t need to be cooked for a very long time to break down completely. Once the ingredients are well combined and the porridge has reached your preferred thickness, it’s time to season. Add 1 Tbsp of fish sauce to season the porridge. You can also adjust with salt to your taste. Fish sauce adds a wonderful umami flavor that complements the vegetables.

Step 5
