This year has been incredibly challenging for everyone due to the COVID-19 pandemic. Yet, Christmas and the year-end holidays approach as always. Many households are facing financial difficulties, making extravagant celebrations feel like a luxury. This year, we’ll be celebrating quietly and cozily at home. To make our modest Christmas dinner special, I’ve created ‘Egg Rolls’ using ingredients readily available in the refrigerator – they’re easy, simple, and delicious. These are perfect as a snack or as a light accompaniment to drinks.

Essential Ingredients
  • 3 fresh eggs
  • 2 Tbsp finely minced onion
  • 2 Tbsp finely minced carrot
  • 2 Tbsp finely chopped Spam ham
  • 2 Cheongyang peppers, seeds removed and finely minced
  • A little blanched broccoli, finely chopped
  • 1 Tbsp cooking oil
  • 1/2 cup cooked rice

Seasonings for Flavor
  • 1 tsp tuna extract (for umami)
  • 1 Tbsp cream cheese
  • 1 Tbsp sesame seeds
  • A pinch of black pepper

Cooking Instructions

Step 1

First, prepare the vegetables and ham that will bring flavor and texture to your egg rolls. Finely mince the onion, carrot, Spam ham, and Cheongyang peppers. Mincing them finely ensures they mix well with the egg and create a soft texture when cooked. Crack the fresh eggs and set them aside.

Step 2

In a large bowl, crack the 3 eggs and whisk them thoroughly with 1 tsp of tuna extract for added umami. Whisking the eggs well is key to achieving a smooth egg crepe. Add the minced onion, carrot, Spam ham, and Cheongyang peppers to the bowl and mix everything together with a spoon until well combined.

Step 3

Heat a non-stick pan over medium-low heat and add 1 Tbsp of cooking oil, ensuring it coats the pan evenly. Once the pan is sufficiently heated, pour the egg mixture using a ladle, spreading it thinly and evenly across the pan. It’s important to cook this over medium-low heat to prevent the egg from burning. If your pan is large, you can divide the mixture and cook multiple crepes.

Step 4

As the edges of the egg crepe start to set and the surface begins to cook, carefully flip it over with a spatula. Cook the other side until it’s golden brown. Ensure the egg is fully cooked to prevent it from tearing when you roll it later, maintaining a neat appearance.

Step 5

Once the egg crepe is well-cooked, spread 1 Tbsp of cream cheese thinly over the surface using a spoon. The melting cream cheese will blend with the egg, creating a richer flavor. Be careful not to spread too much, as it can become too rich; a thin layer is best.

Step 6

Sprinkle 1 Tbsp of sesame seeds for a nutty aroma and a pinch of black pepper for a subtle kick over the cream cheese. While the crepe is still warm, use kitchen scissors to cut it into bite-sized pieces, like pizza slices. This creates the perfect shape for your finger-food egg rolls.

Step 7

Shape 1/2 cup of warm cooked rice into small balls to place on top of the egg rolls. Round rice balls add a nice visual appeal and complement the texture of the egg rolls. Garnish the center with finely chopped blanched broccoli, if desired. Broccoli is optional and can be substituted with other colorful vegetables.
