First, prepare 1/4 zucchini. Slice it into 0.5cm thick pieces, cut into quarters. This thickness is perfect for softening nicely in the soup. Add the sliced zucchini, 1 Tbsp dried anchovy powder, 1/2 Tbsp soy sauce for soup, and 1/4 Tbsp salted shrimp to your ramen pot (or regular pot).
* Tip: Salted shrimp adds a wonderful umami flavor, but it can be quite salty, so using soy sauce for soup is recommended. If you don’t have salted shrimp, you can substitute it with 1/4 Tbsp of regular salt.

Pour in 300ml of water (about 1.5 standard cups). If you don’t have a measuring cup, one standard cup (250ml) plus a little extra will suffice. Give it a gentle stir to combine the ingredients.

Now, turn the heat to high and bring the soup to a boil, uncovered, for about 2-3 minutes. Once boiling, crack the egg into the pot. Gently break the yolk and stir just twice with chopsticks. Over-stirring will cause the egg to disperse completely, making the broth cloudy. Add the chopped green onions and two dashes of black pepper. Continue to boil uncovered for another 2 minutes, then turn off the heat.
* Tip: Avoid stirring the egg too much after adding it; this is the key to achieving a clear and beautiful egg drop soup. You can use the same method when cooking in a regular pot.
