Main Ingredients

  • 1 medium zucchini
  • 1 egg
  • 2 Tbsp pancake mix (approx. 30g)
  • Cooking oil (generous amount)
  • Pinch of salt (optional)

Cooking Instructions

Step 1

First, wash the zucchini thoroughly. Then, slice it into rounds about 0.5 cm thick. Slicing them too thinly might cause them to break apart, so aim for a moderate thickness. Place the sliced zucchini into a zip-top bag or a plastic bag.

Step 1

Step 2

Add 2 tablespoons of pancake mix into the bag with the zucchini. Seal the bag tightly and shake well to ensure the zucchini slices are evenly coated with the mix. This creates a light coating that will make the pancakes extra crispy.

Step 2

Step 3

In a separate bowl, crack one egg and beat it with a fork or whisk until well combined, breaking up the chalaza (the stringy white parts). You don’t need to whisk it excessively. If the egg mixture is too thin, the coating might not adhere well, so aim for a moderately thick consistency.

Step 3

Step 4

Dip each zucchini slice, coated in pancake mix, into the beaten egg mixture. Ensure each slice is fully coated on both sides with the egg. Gently toss them to make sure the egg coats the zucchini evenly.

Step 4

Step 5

Heat a generous amount of cooking oil in a pan over medium-low heat. Once the pan is sufficiently hot, carefully place the egg-coated zucchini slices one by one. Maintain medium-low heat; high heat can burn the outside while leaving the inside undercooked. Wait until the surface of the zucchini begins to set before preparing to flip.

Step 5

Step 6

Flip the zucchini slices and cook until they are golden brown on both sides. Cook each side for about 2-3 minutes. Your delicious zucchini pancakes are ready when the edges turn a golden brown and they emit a cooked aroma! You can sprinkle a little salt on top if you like.
