Smoked Chicken Breast & Beef Bone Broth Tteokguk: Adding Satisfaction to Satisfaction
This recipe elevates the classic tteokguk by using rich beef bone broth instead of chicken broth for the soup base, and topping it with pan-seared smoked chicken breast for an even more hearty and satisfying meal. It’s perfect for a special occasion or a comforting meal on a chilly day.
Ingredients- 2 cups beef bone broth (approx. 400ml)
- 1 cup kelp broth (approx. 200ml) (or water)
- 1-2 Tbsp soy sauce for soup (adjust to taste)
- Pinch of salt (to season)
- 1/2 Tbsp minced garlic
- 2 Tbsp chopped green onion
- Egg yolk and white omelet (optional, for garnish)
- Tteokguk rice cakes for 2 servings (approx. 300-400g), soaked in cold water for 10 minutes
Cooking Instructions
Step 1
Thinly slice the smoked chicken breast into bite-sized pieces. Aim for about 3mm thickness.
Step 2
Heat a grill pan over medium heat until sufficiently hot. Place the thinly sliced smoked chicken breast onto the hot pan and sear for about 1-2 minutes per side, until lightly golden and fragrant. This step enhances the unique smoky flavor and aroma of the chicken breast.
Step 3
Separate the egg yolks and whites. Pan-fry them into thin omelets, then cut them into diamond shapes for garnish. This step makes the tteokguk look more appealing, but you can skip it if you’re short on time.
Step 4
Pour the beef bone broth and kelp broth into a pot in a 2:1 ratio and bring to a boil. You can substitute kelp broth with plain water or anchovy broth. Once the broth starts boiling, season it with soy sauce for soup and salt to your preference. Using soy sauce for soup alongside the bone broth helps to balance the mildness of the bone broth and adds a savory depth. It’s best to season lightly at first and adjust the final seasoning after adding the rice cakes.
Step 5
When the broth is at a rolling boil, drain the soaked tteokguk rice cakes and add them to the pot. Cook until the rice cakes are tender and soft, about 3-5 minutes. Once the rice cakes are cooked, add the minced garlic and chopped green onions, and simmer for another moment to allow their flavors to meld into the broth. Finally, mix salt and soy sauce for soup to achieve the perfect seasoning. Taste a rice cake to ensure the seasoning is just right.
Step 6
Ladle the finished tteokguk into a deep bowl. Garnish with the prepared egg omelets and the seared smoked chicken breast slices. While the smoked chicken breast is delicious on its own, you can enhance the flavor further by serving it with a small dish of soy sauce mixed with a drop or two of sesame oil for dipping.
