Kimbap Filling Ingredients
- 100g smoked chicken breast
- 1/2 bell pepper (use various colors for visual appeal)
- 1/2 carrot
- 1/2 bunch of Korean chives (buchu)
- 4 perilla leaves (깻잎)
- 100g brown rice (or regular cooked rice)
Seasoning and Finishing
- 20g oriental dressing (or soy sauce + sesame oil + sesame seeds)
- Pinch of sesame seeds
- Pinch of sesame oil

Cooking Instructions
Step 1
First, prepare the brown rice. While the rice is warm, sprinkle sesame seeds over it. Gently mix the rice with a spatula or spoon, being careful not to mash the grains. This ensures each grain is infused with the nutty flavor of sesame. (Optional: You can add a pinch of salt to the rice for extra flavor.)
Step 2
Next, prepare the filling ingredients. Slice the smoked chicken breast into bite-sized pieces, about 1cm thick. Finely julienne the bell pepper and carrot. Wash the Korean chives, pat them dry, and cut them into 2-3cm lengths. Wash the perilla leaves, pat them dry, and cut them in half.
Step 3
Place a sheet of seaweed (gim) on a bamboo rolling mat. Spread the prepared brown rice evenly over about two-thirds of the seaweed, leaving a small border at the top. Be careful not to spread the rice too thickly, as this can cause the kimbap to break or be difficult to roll. Arrange the smoked chicken breast, bell pepper, carrot, Korean chives, and perilla leaves neatly over the rice.
Step 4
Using the bamboo mat, tightly roll the kimbap from the bottom edge upwards. Ensure it’s rolled firmly so the fillings don’t fall out. Once rolled, brush the outside of the kimbap with sesame oil for a glossy finish. Slice the kimbap into bite-sized pieces, about 1.5-2cm thick. Arrange the finished Smoked Chicken Breast Kimbap in a lunchbox for a wonderful meal. Serving with the oriental dressing enhances the flavor.
