I wanted some stir-fried napa cabbage kimchi, but realized I didn’t have any pork. So, I decided to try stir-frying it with smoked duck instead! The result is a delicious dish with a unique savory flavor.

Main Ingredients

  • 1 pack (600g) pre-cooked smoked duck
  • 1/4 head of napa cabbage kimchi, well-fermented
  • 2 Tbsp chopped green onion

Seasoning & Others

  • Pinch of black pepper
  • 2 Tbsp cooking wine (mirin or sake)
  • 2 Tbsp sugar
  • 1 pinch of salt (adjust to kimchi’s saltiness)
  • Sesame seeds, for garnish
  • A little perilla oil (deulgireum)

Cooking Instructions

First, prepare one pack (600g) of pre-cooked smoked duck. Since it’s already cooked, it’s very convenient to use.

Cut about a quarter of a well-fermented napa cabbage kimchi into bite-sized pieces. If your kimchi is very sour, you might want to add a little more sugar or other seasonings.

Heat a pan and place the cut kimchi at the bottom. Then, add the prepared smoked duck on top and cut it into manageable pieces directly in the pan. Stir-frying the kimchi and duck together allows the flavors to meld beautifully.

Now it’s time to add the seasonings. Add 2 tablespoons of sugar, a pinch of black pepper, and a pinch of salt. Adjust the salt according to the kimchi’s saltiness. Stir well with a spatula, making sure not to burn the ingredients, and cook over medium heat.

Once it’s cooked a bit, add 2 tablespoons of chopped green onion. Drizzle in a little perilla oil to enhance the aroma. The refreshing scent of the green onions will further elevate the taste of the smoked duck and kimchi.
