Delicious Smoked Duck and Potato Stir-fry Recipe
A simple yet incredibly delicious stir-fry featuring the delightful combination of chewy smoked duck and fluffy potatoes. Perfect as a side dish for rice or a tasty appetizer with drinks!
Ingredients- 3 Potatoes
- 200g Smoked Duck (or desired amount)
- Pinch of salt
Cooking Instructions
Step 1
First, wash and peel the 3 potatoes thoroughly. To prevent them from breaking apart during stir-frying, it’s best to cut them into relatively thick strips, about 0.5cm thick. This thickness ensures a satisfying bite and helps them maintain their shape.
Step 2
Rinse the cut potatoes under running water multiple times to remove surface starch. Properly removing the starch prevents the potatoes from sticking together or becoming mushy while stir-frying, resulting in a nicely separated texture.
Step 3
After rinsing off the starch, soak the potatoes in cold water for about 5 minutes. This step further removes any residual starch and helps to keep the potatoes crisp.

After 5 minutes, drain the potatoes in a colander, ensuring all excess water is removed. Excess water can cause oil splattering during cooking and make the potatoes soggy, so thorough draining is essential. You can also pat them dry with a paper towel for extra dryness.

For the smoked duck, there’s no need for precise measurement; just prepare an amount you’d like to eat. About 200g is usually a good portion for 2-3 people. Cut the duck into bite-sized pieces. While you can cook it whole, dicing it makes it integrate better into the stir-fry.

Now, heat a pan over medium heat. Once the pan is sufficiently hot, add the smoked duck and stir-fry until it releases its oil. Stir occasionally to prevent burning.

As you stir-fry the smoked duck, you’ll notice a generous amount of delicious oil naturally rendering out from the duck. This oil is the secret ingredient that will add incredible flavor to your potato stir-fry!

Once the duck has released plenty of oil, add the drained potatoes to the pan and stir-fry them together. Since the smoked duck is already seasoned, those who prefer less salt might find it flavorful enough without adding extra salt. However, I felt a little salt would enhance the potatoes, so I sprinkled a pinch of salt to season them lightly.

Because the duck continues to release oil, the potatoes will cook without sticking or burning. The combination of the duck’s rich flavor and the potatoes’ savory taste creates an irresistible aroma. The dish will look glossy and appetizing.
