Smoked Duck & Kimchi Stir-fry: The Ultimate Rice Companion
Crispy and Flavorful Smoked Duck and Kimchi Stir-fry
We’ve made a simple yet delicious stir-fry using smoked duck and well-fermented aged kimchi. The smoky aroma of the duck combined with the crispness of the kimchi makes this dish an absolute ‘rice thief’! It’s perfect for a quick, satisfying meal.
Main Ingredients- 150g smoked duck
- 1 bowl (approx. 1 cup) well-fermented kimchi
Seasoning & Others- 1 Tbsp perilla oil
- 1 Tbsp cooking wine (mirin or sake)
- Pinch of black pepper

Cooking Instructions
Step 1
First, slice the smoked duck into thin strips. If the duck pieces are too long, cutting them into 2-3 pieces will make stir-frying easier. Next, chop the well-fermented kimchi into bite-sized pieces, about 2-3 cm each, to match the size of the duck. If your kimchi is very juicy, you can gently squeeze out some of the excess liquid.
Step 2
Heat a pan over medium heat. Add the sliced smoked duck and stir-fry until it becomes lightly browned and some fat renders out. This step helps to develop the duck’s rich flavor.
Step 3
Once the duck is nicely browned, push it to one side of the pan. Add the chopped kimchi to the empty space in the pan and spread it out evenly. Stir-frying the kimchi directly on the pan surface helps to remove any ‘kimchi funk’ and enhances its flavor.
Step 4
When the kimchi begins to soften (after about 1-2 minutes of stir-frying), mix it together with the duck. Add 1 tablespoon of cooking wine (like mirin or sake) to eliminate any unwanted odors and add a touch of depth. Finally, drizzle in 1 tablespoon of perilla oil and stir-fry everything together thoroughly until well combined.
Step 5
If there’s a lot of liquid in the pan, continue stir-frying until most of the liquid has evaporated. The ingredients will meld together, concentrating their flavors. Lastly, sprinkle in a pinch of black pepper for aroma and give it a final quick stir.
Step 6
Transfer the delicious smoked duck and kimchi stir-fry to a serving dish. This dish is perfect served over a bowl of hot steamed rice, or enjoyed as a side dish. It’s a guaranteed hit with a hearty meal!
