Main Ingredients
- 150g Smoked Ham
- 1/2 Head of Aged Kimchi (approx. 500g)
- 1 Ladle of Broth or Anchovy-Kelp Broth (approx. 150ml)
Cooking Instructions
Step 1
First, dice the 150g of smoked ham into bite-sized cubes, about 1.5cm thick. Heat a non-stick pan over medium heat, add a little oil, and stir-fry the ham pieces until they are lightly browned and have released some of their fat. This step helps to enhance the ham’s savory flavor, making the final dish even more delicious.
Step 2
Remove the cooked ham to a separate plate. In the same pan, add the finely chopped 1/2 head of kimchi. Stir-fry the kimchi for about 3-4 minutes until it becomes slightly translucent. Then, add 2 tablespoons of perilla oil and continue to stir-fry. This process mellows the sourness of the kimchi and infuses it with a wonderful aroma.
Step 3
Once the kimchi is well-stirred, return the cooked smoked ham to the pan. Add 2 tablespoons of sugar and 2 tablespoons of plum extract. Increase the heat to high and quickly stir everything together to ensure the sweet, savory, and tangy flavors meld harmoniously.
Step 4
Now, carefully pour 1 ladle (approx. 150ml) of broth or anchovy-kelp broth around the edges of the pan. Reduce the heat to medium and let it simmer gently for about 5-7 minutes, allowing the flavors to meld and the liquid to reduce to a thick sauce that coats the ingredients. Once the sauce has thickened and the ingredients are glossy, turn off the heat and sprinkle 1 tablespoon of toasted sesame seeds over the top for a final nutty aroma.
Step 5
Enjoy the delightful contrast between the crisp kimchi and the chewy chunks of smoked ham! This perfectly balanced sweet, spicy, and savory smoked ham kimchi stir-fry is ready. Serve it over warm rice for a satisfying meal, or keep it as a delicious banchan (side dish). It’s also a fantastic companion for a beer or soju when you’re looking for a tasty snack. Adding it to your ramen will elevate your noodle dish to a whole new level of flavor!
