I’ve always made potato pancakes by frying shredded potatoes until crispy. This time, I decided to try making them with mozzarella cheese inside and Grana Padano cheese grated on top. The result was incredibly delicious! This recipe elevates the classic potato pancake to a whole new level of cheesy, crispy goodness.

First, peel the potatoes using a vegetable peeler. Then, using a mandoline slicer or a fine grater, shred the potatoes into very thin strands. Thinly shredded potatoes will result in a crispier and more flavorful pancake.

To the shredded potatoes, add two pinches of salt and a pinch of black pepper. Mix them well to season. This step helps to draw out some moisture from the potatoes and enhances their savory flavor.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Ample oil is key to ensuring the potato shreds cook evenly and become golden brown without burning. Once the oil is hot, spread the shredded potatoes thinly in the pan to form a pancake shape.
