Main Ingredients

  • Acorn jelly (Dotori-muk) 200g
  • Sea purslane (Sebal namul) 50g
  • Red chili pepper 1/2
  • Green chili pepper 1
  • Scallion (green part) 1 stalk
  • Minced onion 1 Tbsp

Dressing Ingredients

  • Low-sodium soy sauce 3 Tbsp
  • Plum extract (Maesil-cheong) 1/2 Tbsp
  • Lemon juice 1 Tbsp
  • Yuzu extract (Yuja-cheong) 1 tsp
  • Sesame oil (Deul-gireum) 1 Tbsp
  • Toasted sesame seeds 1 Tbsp

Cooking Instructions

Step 1

First, take the hardened acorn jelly from your refrigerator. Cut the acorn jelly into bite-sized pieces or shapes that suit a salad. You can julienne it, dice it into cubes, or cut it into your preferred shape.

Step 1

Step 2

Preheat your air fryer to 160°C (320°F). Place the cut acorn jelly into the air fryer basket and cook for about 10 minutes. This process will surprisingly revive the jelly, making it soft and moist. Keep an eye on it to prevent burning.

Step 2

Step 3

Rinse the sea purslane thoroughly under running water. After washing, spread it out on paper towels to absorb excess moisture. Excess water can make the salad taste diluted.

Step 3

Step 4

Prepare the vegetables that will add color and flavor to your salad. Finely chop the red chili pepper and green chili pepper after removing the seeds. Wash and finely chop the scallion. Also, prepare 1 tablespoon of minced onion. Adjust the amount of green chili pepper if you prefer it spicier.

Step 4

Step 5

Now, let’s make the delicious dressing. In a bowl, combine 3 Tbsp of low-sodium soy sauce, 1/2 Tbsp of plum extract, 1 Tbsp of lemon juice, 1 tsp of yuzu extract, 1 Tbsp of sesame oil, and 1 Tbsp of toasted sesame seeds. Mix them well. Add the chopped red chili pepper, green chili pepper, minced onion, and scallion to the bowl and mix thoroughly to combine the flavors.

Step 5

Step 6

Add the softened acorn jelly, which has been warmed in the air fryer, to the bowl with the prepared dressing. Gently mix the acorn jelly into the dressing, ensuring it’s evenly coated. Be careful not to break the jelly as you toss it.

Step 6

Step 7

Finally, add the prepared sea purslane to the bowl and gently toss everything together. Adding the sea purslane at the end and mixing lightly helps maintain its fresh crunch, which is key to a great texture.

Step 7

Step 8

Transfer the beautifully prepared acorn jelly salad to a serving dish. Enjoy the harmonious blend of fresh vegetables and the wonderfully soft yet chewy acorn jelly!
