  • 3 bunches of baby spinach (roots trimmed)

  • 3 Tbsp milk (for extra tenderness)
  • 2/3 Tbsp soy sauce
  • 1 Tbsp raw sugar or regular sugar

Cooking Instructions

Wash the fresh spinach thoroughly under running water. Pay special attention to the roots, as they can hold dirt, and rinse them out completely. Remove any yellow or wilted leaves. Trim off any tough parts of the roots or separate the attached stems slightly, then prepare the spinach.

Chop the washed spinach into bite-sized pieces, about 3-4 cm long. If the pieces are too long, they can be difficult to eat, so cutting them into manageable sizes is best.

Crack the 4 eggs into a bowl. Add 3 tablespoons of milk and a pinch of salt (a few sprinkles). The milk will make the eggs extra tender and moist. Gently whisk the eggs with a fork until smooth. You don’t need to whip them vigorously.

Heat a wide pan over medium heat and add 1.5 tablespoons of cooking oil. Add the prepared spinach and stir-fry lightly. The key is to cook it just until the spinach slightly wilts, maintaining a tender-crisp texture.

Avoid overcooking the spinach, as it will become too soft and lose its pleasant crunch. Stir-fry it very briefly, just enough to retain its crispness. Push the lightly stir-fried spinach to one side of the pan and pour the beaten egg mixture into the empty space.

Once the egg is poured, maintain medium heat and gently stir the egg with chopsticks or a spatula, moving it towards the cooked side. Be careful not to cook over high heat, as the eggs can burn or become dry and tough.

When the eggs are about 70-80% cooked and still soft and custardy, reduce the heat slightly or turn it off momentarily. Gently mix the cooked eggs with the spinach that was pushed to the side. Then, drizzle 2/3 tablespoon of soy sauce evenly over the spinach. Finally, sprinkle 1 tablespoon of raw sugar (or regular sugar) over everything. This will help the soy sauce and sugar coat the eggs and spinach evenly.

Once all ingredients are mixed, return the pan to medium heat and stir-fry for another 30 seconds. Don’t overcook, as the eggs can become tough and the spinach mushy. Stir quickly to combine everything well and ensure the flavors meld together.
