The weather is so cold these days, isn’t it? Staying indoors is the safest bet! On days like these, you crave something warm and comforting. I’m sharing a recipe for delicious omurice that my husband and I made together over the weekend. Feel free to use any vegetables you have in your fridge, and enjoy a hearty omurice for dinner tonight!

Omurice Fried Rice Ingredients

  • 3 large eggs
  • 1.5 bowls of warm cooked rice
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped potato
  • 1/2 cup finely chopped zucchini
  • 3 Tbsp canned corn kernels

Fried Rice Seasoning

  • 1 Tbsp ketchup
  • Pinch of salt
  • Pinch of black pepper

Cooking Instructions

Step 1

First, prepare all the ingredients for your omurice. It’s a great way to use up any leftover vegetables in your fridge! Finely chop them up. If you’ve frozen potatoes for fried rice, they might look a bit discolored, but don’t worry – they’ll return to their normal color when cooked. For the eggs, whisk them thoroughly, remove the chalaza (the white stringy bits), and season lightly with salt.

Heat 1-2 tablespoons of cooking oil in a pan over medium-low heat. Add the finely chopped onion and sauté until translucent. Caramelizing the onions will bring out their natural sweetness.

Once the onions are softened and slightly golden, add the finely chopped zucchini and potato to the pan. Continue to stir-fry until the vegetables are tender.

When the vegetables are cooked through, add the canned corn kernels. Sprinkle with a pinch of salt and pepper to season. The corn adds a lovely sweetness and texture.

Add the warm cooked rice to the pan with the vegetables. Use a spatula to gently break up the rice and mix it thoroughly with the vegetables and seasonings. Ensure the rice is well combined and not clumpy.

Once the rice and vegetables are well mixed, add 1 tablespoon of ketchup. Stir quickly to incorporate the ketchup evenly. This will give your omurice its classic tangy and sweet flavor.

Your delicious omurice filling is now ready! It’s tasty enough to eat on its own. For an extra flavor boost, you can add a dash of soy sauce or oyster sauce.

Now, let’s make the fluffy egg blanket, the star of the omurice! Lightly grease a clean non-stick pan with oil and preheat it over low heat. Carefully pour the whisked egg mixture into the pan.

I used 3 eggs, which made the layer quite thick, so it took a little longer to cook. To prevent the egg from overcooking and becoming rubbery, gently stir the egg mixture with chopsticks or a spatula as it cooks, similar to making an omelet. This helps it cook evenly from the edges to the center.

When the egg is about 80% cooked and still slightly moist, turn off the heat. Prepare to place the fried rice on top. Be careful not to overcook the egg, as it might tear.

With the heat off, carefully place the fried rice onto the cooked egg in the pan. Gently fold the egg over the rice to encase it. Even though I cooked it on low heat, the egg cooked a bit more than I intended. (Tip: If the egg is still quite runny, you can tilt the pan and use the egg to help cover the rice for a neater shape.)

The egg tore slightly in one spot, but for a first attempt, it tasted absolutely wonderful! The combination of soft egg and tangy ketchup is pure comfort food, especially for those with a sweet tooth like me!

You can also get creative and turn this omurice into a cute character bento! Mix ketchup into some rice, shape it into a bear using plastic wrap, and then fill it with the fried rice mixture. Kids will absolutely love it! Make your mealtime fun and adorable with this omurice!
