Ingredients

  • 9 fresh eggs
  • 500ml water
  • A little chopped green onion (for garnish)
  • A little chopped carrot (for garnish)
  • A little chopped onion (for garnish)
  • 1/2 Tbsp salt
  • 1/2 Tbsp salted shrimp, minced
  • A pinch of pepper (to taste)
  • 2 Tbsp sesame oil
  • 1 Tbsp sesame seeds (for garnish)

Cooking Instructions

Step 1

In a large, spacious bowl, crack open 9 fresh eggs. Prepare to whisk them until they are ready to be cooked.

Step 1

Step 2

Add 500ml of water to the bowl with the eggs. Stir in 1/2 Tbsp of minced salted shrimp for a savory flavor boost and 1/2 Tbsp of fine salt to season. If you don’t have salted shrimp, you can also use soy sauce or fish sauce.

Step 2

Step 3

Using a spatula or whisk, gently beat the eggs until they are smoothly combined and no lumps remain. Avoid whisking too vigorously; a gentler mix creates a better texture. Add a pinch of pepper at this stage, if desired.

Step 3

Step 4

Finely chop the green onions, carrots, and onions after washing them thoroughly. When dicing vegetables for garnish, making them very small will ensure the steamed egg remains wonderfully smooth.

Step 4

Step 5

Stir in 2 Tbsp of sesame oil for a rich aroma and 1 Tbsp of sesame seeds for added nutty flavor into the egg mixture. Sesame oil not only eliminates any eggy smell but also imparts a deeper taste to the steamed egg.

Step 5

Step 6

Pour the egg mixture into the pot. Lightly greasing the bottom of the pot with sesame oil before pouring can help prevent sticking. Start heating over medium heat for about 1 minute. Once the edges begin to set slightly, gently scrape the bottom with a chopstick or spatula to create soft curds. After about a minute, reduce the heat to very low and cover the pot with a lid.

Step 6

Step 7

Regular pots tend to burn more easily than earthenware pots, so it’s crucial to cook on very low heat to prevent burning. Allow it to cook, covered, for a total of about 15 minutes, or until the egg is completely set and has a slightly jiggly, custard-like consistency. Avoid opening the lid frequently during cooking.

Step 7

Step 8

Once the steamed egg is fully cooked, turn off the heat. Garnish generously with the finely chopped green onions, carrots, onions, and sesame seeds. Serve immediately while warm for the ultimate rice-loving dish! Enjoy your delicious homemade steamed egg!
