Today, I made rolled omelet rice, which my baby absolutely loves! Did you know you can make rice muffins, rice pancakes, or steamed rice omelets with the same batter? Today, I’ve rolled it up like a traditional omelet for a more appealing look. Using 3 generous eggs and rolling it all at once results in a thick and hearty omelet; just two pieces are quite filling. Adding the baby’s favorite cheese in the middle makes it even more flavorful and delicious. If your baby enjoys ketchup, a little drizzle on top will make it even tastier!

Ingredients

  • 80g warm cooked rice
  • 10g carrot (finely minced)
  • 10g zucchini (finely minced)
  • 5g green onion (white part only, finely minced)
  • 3 fresh eggs
  • 2 slices baby cheese
  • 3 Tbsp milk
  • Pinch of salt (for baby)
  • Rice bran oil (or baby-friendly cooking oil)

First, let’s prepare the vegetables that will add flavor to our rolled omelet rice. Finely mince the carrot, zucchini, and the white part of the green onion. Even if your child is a picky eater when it comes to vegetables, mincing them finely like this allows them to be incorporated subtly.

In a large bowl, combine the warm cooked rice, the finely minced vegetables, 3 fresh eggs, 3 tablespoons of milk for extra tenderness, and a tiny pinch of salt. Mix everything thoroughly to create the batter. Using chopsticks or a whisk to break the egg whites will help create a smoother batter.

Now it’s time to make the omelet! Lightly grease a pan heated over low heat with rice bran oil. Pour a thin layer of the egg batter. Once the batter starts to set, carefully place 2 slices of baby cheese evenly over it. Then, gently roll up the omelet. Adding cheese and rolling it makes it more appealing and enhances the flavor for your child.

Gently push the rolled omelet to one side of the pan. Pour another thin layer of egg batter into the empty space. Roll the newly added batter around the existing omelet to create a thicker roll. Repeat this process, cooking slowly and evenly until golden brown on all sides, including the edges.
