Stir-frying Sauce

  • 2 Tbsp Cooking Oil
  • 2 Tbsp Soy Sauce (regular)
  • 3 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Sugar
  • 1 Tbsp Corn Syrup (or Oligosaccharide)
  • A pinch of Toasted Sesame Seeds (for garnish)

  • 3 Tbsp Cooking Wine (like Mirin)

Cooking Instructions

First, cut the dried shredded squid (jinmichae) into bite-sized pieces, about 3cm long. Cutting them to a suitable length will make them easier to eat.

This step is crucial for tenderizing the jinmichae and removing any unpleasant odor. In a bowl, combine 3 tablespoons of cooking wine with the cut jinmichae. Gently knead them together until they become softer. This process significantly softens the chewy texture. Cover the bowl and microwave for about 1 minute (on a 600W microwave) to allow the flavors to meld and further soften the squid.

Now, let’s make the delicious stir-frying sauce. In a pan, add 2 tablespoons of cooking oil, 1 tablespoon of minced garlic, 2 tablespoons of soy sauce, 2 tablespoons of sugar, and 3 tablespoons of gochujang. Bring this mixture to a simmer over medium-low heat. Stir occasionally to prevent the sauce from burning.

Once the sauce begins to bubble, immediately turn off the heat to prevent splattering. Add the softened jinmichae (that was microwaved) to the pan. Toss everything together thoroughly to coat the squid evenly with the sauce.
