Today, I’m sharing a delightful Tofu Ssamjang, perfect for enjoying with fresh vegetables. Its soft and savory flavor is wonderfully mild, not too salty, making your ssam bap (rice wrapped in leaves) much more satisfying. It’s easy to make at home, so why not try this family-favorite dish?

Main Ingredients

  • 2/3 block of tofu (approx. 200g)
  • 1/2 stalk of green onion (white part mainly)
  • 1 medium onion

Cooking Instructions

Step 1

First, mash the tofu using the back of a knife or a fork until it’s finely mashed. Drain any excess water lightly by placing it in a sieve. Finely chop the white parts of the green onion. Finely dice the onion.

Heat a pan over medium heat and add 2 Tbsp of perilla oil. Add the chopped green onions and stir-fry over low heat until fragrant and translucent. Cooking until the green onion releases its aroma and becomes slightly clear is key to creating a delicious green onion oil.

Once the green onion oil is ready, add the diced onion and sauté until it becomes translucent. The sweetness from the onion will enhance the flavor of the ssamjang.

Now, add the mashed tofu to the pan and stir-fry it with the onions. Gently mix with a spatula to prevent the tofu from breaking apart completely. Be careful not to let the tofu stick to the pan.

When the tofu is partially cooked, add 1 Tbsp of minced garlic and stir-fry together to release the garlic’s fragrance. Be mindful not to overcook the garlic, as it can become bitter.

Add 2 Tbsp doenjang, 2 Tbsp gochujang, and 1 Tbsp gochugaru. Stir well and sauté until all ingredients are combined and the paste darkens slightly. The key is to stir-fry until the savory flavors of doenjang and gochujang harmonize.

Finally, add 1 Tbsp of plum extract and stir for a little longer until everything is well combined. Your delicious Tofu Ssamjang is ready! It tastes fantastic wrapped in fresh leaves with warm rice.
