Soft and Fragrant Tofu and Chive Pancake

We’ve made a wonderfully mild and flavorful pancake using aromatic chives and healthy tofu. This dish is highly recommended as a light meal replacement or a satisfying late-night snack. It’s easy to prepare with simple ingredients, making it perfect for beginners.

Main Ingredients

  • 1/2 block Tofu (approx. 150g)
  • 1/4 bunch Chives (approx. 50g)
  • 1/4 Onion (approx. 30g)
  • 2 Green chili peppers (adjust to your preference)
  • 1 Egg
  • 2 Tbsp Cooking oil

Seasoning

  • 2 pinches Salt (approx. 1/4 tsp)
  • A pinch of Black pepper

Cooking Instructions

Step 1

First, wash the fresh chives thoroughly under running water. After washing, drain them well on a colander and cut them into approximately 3-4cm lengths for a neat presentation.

Finely mince the green chili peppers, removing the seeds if you prefer less heat. You can leave the seeds in if you enjoy spicy food. Finely dice the onion as well. Lightly rinse the tofu under running water, gently pat it dry, and prepare half a block for use.

In a pot, add enough water to completely submerge the tofu and bring it to a boil over high heat. Once the water is boiling vigorously, add the prepared half block of tofu and blanch for about 2-3 minutes until softened. Blanching removes any raw tofu smell and makes it more tender.

Quickly remove the blanched tofu and drain it thoroughly in a colander to get rid of the hot water. It’s best to mash the tofu while it’s still warm for easier mashing. Use a spoon or spatula to break it down into a fine, smooth consistency without any lumps. Mashing it well is key to a soft texture.

Transfer the mashed tofu to a large bowl. Add the pre-minced onion and green chili peppers, along with 1 fresh egg. Season with 2 pinches of salt and a pinch of black pepper to balance the flavors.

Gently mix all the ingredients in the bowl using your hands or a spatula until well combined. Ensure the ingredients are thoroughly mixed before adding the chives to create a cohesive batter.

Heat a non-stick frying pan over medium heat and add about 2 tablespoons of cooking oil. Ladle portions of the tofu mixture onto the pan and spread them out into round, relatively thin shapes. Spreading them thinly helps them cook evenly.

Arrange the prepared chives attractively on top of the tofu mixture. Gently press down with your fingers or the back of a spoon to help the chives adhere to the batter. This ensures the fragrant essence of the chives infuses into the pancake.

Cook over medium-low heat until the bottom of the pancake is golden brown. When the edges start to show a light brown color, carefully flip the pancake using a spatula. Gently pressing down with the spatula while flipping can help maintain a nice shape.

Cook the other side until it’s also golden brown and beautifully cooked. Once both sides are a delicious golden-brown color, carefully transfer the Tofu and Chive Pancake to a plate and serve warm. A side of soy sauce for dipping will enhance the flavor!
