  • Cooking wine (Mirin) 1 Tbsp
  • Mayonnaise 1 Tbsp

First, gently rinse the dried shredded squid under running water and lightly squeeze out excess moisture. Place it in a bowl. Cutting it into bite-sized pieces with scissors will help the seasoning penetrate better.

In the bowl with the squid, add 1 Tbsp of cooking wine and 1 Tbsp of mayonnaise. Gently mix them together with your hands. Adding mayonnaise is the key to keeping the dried squid soft and moist, making it easier to chew and enhancing its flavor. Now, let’s make the delicious seasoning sauce. In a small bowl, combine 2 Tbsp of gochujang, 1 Tbsp of gochugaru, 1/2 Tbsp of soy sauce, 1/2 Tbsp of sugar, 1 Tbsp of minced garlic, 2 Tbsp of cooking wine, 2 Tbsp of oligosaccharide, and 1 Tbsp of cooking oil. Stir well with a spoon until all ingredients are evenly incorporated. It’s important to mix thoroughly.

Heat a pan over medium heat. Pour in the prepared seasoning sauce and 1/4 cup of water. Bring it to a simmer. As it starts to boil, you’ll notice a wonderful aroma. Stir occasionally with a spatula to prevent the sauce from sticking to the bottom of the pan.

Once the sauce begins to boil, let it simmer for about 2 more minutes to slightly thicken. Then, add the seasoned dried shredded squid to the pan and stir-fry quickly over high heat. The key is to mix it rapidly for about 1 minute, ensuring the seasoning coats the squid evenly. Finally, turn off the heat and sprinkle generously with toasted sesame seeds.
