Main Ingredients
  • 150g dried pollack strips (Remove fins and bones, then tear or cut into bite-sized pieces.)
  • 2 Tbsp mayonnaise
  • 2 stalks green onions (finely chopped)
  • 1 Tbsp toasted sesame seeds

Seasoning Ingredients
  • 2.5 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp soy sauce
  • 2 Tbsp oligo syrup (adjust sweetness to your preference)
  • 1 Tbsp minced garlic

Cooking Instructions

Step 1

First, briefly soak the dried pollack strips in cold water for about 30 seconds to 1 minute, then immediately remove them. Be careful not to soak them for too long as they might break apart. After removing from water, pat them thoroughly dry with paper towels or a clean cloth to ensure they don’t clump together when stir-fried.

Step 2

Add 2 tablespoons of mayonnaise to the dried pollack strips and gently mix them with your hands. The mayonnaise will coat the pollack, helping it absorb the sauce well while staying moist. This step prevents the pollack from becoming tough.

Step 3

Now, let’s make the delicious sauce. In a small bowl, combine 2.5 tablespoons of gochujang, 1 tablespoon of gochugaru, 2 tablespoons of soy sauce, 2 tablespoons of oligo syrup, and 1 tablespoon of minced garlic. Mix them thoroughly with a spoon to create the seasoning paste. You can also use corn syrup or sugar instead of oligo syrup.

Step 4

Heat about 1-2 tablespoons of cooking oil in a pan over medium-low heat. Add the prepared seasoning paste and cook, stirring to prevent burning. Once the sauce starts to bubble, the base for your stir-fry is ready.

Step 5

When the sauce begins to bubble, add the mayonnaise-coated dried pollack strips. It’s crucial to stir-fry them quickly over low heat to ensure the sauce coats evenly. Avoid stir-frying for too long, as this can dry out the pollack and make it tough. Stir for just 1-2 minutes until the pollack is coated and remains moist. Finally, sprinkle with the chopped green onions and toasted sesame seeds, and give it a quick toss. Your tender and flavorful dried pollack stir-fry is complete!
