We’ll show you how to make this delicious soy sauce-flavored shredded squid by stir-frying it until slightly chewy to remove any fishy odor, then coating it in a sweet and savory glaze.

  • 150g dried shredded squid
  • 2 Tbsp cooking oil
  • 1 Tbsp soy sauce
  • 2 Tbsp cooking wine (mirin or sake)
  • 2.5 Tbsp corn syrup or oligosaccharide
  • 1 Tbsp sesame oil
  • 1-2 Tbsp sesame seeds

Cooking Instructions

Step 1

First, prepare the dried shredded squid. Since the long strands can be awkward to eat and may tangle during cooking, cut them into bite-sized pieces, about 2-3 cm long, using scissors. If any pieces are stuck together, gently separate them with your fingers.

Step 2

To remove any potential fishy smell, lightly toast the dried shredded squid in a dry pan first. This process also helps to remove moisture and enhance its flavor. Then, add 2 tablespoons of cooking oil and reduce the heat to medium-low. Stir-fry the squid, ensuring it doesn’t burn, until it’s coated and looks glossy.

Step 3

Continue to stir-fry until the thin, chewy strands gradually soften and begin to curl naturally. This step is crucial for achieving the best texture for the shredded squid.

Step 4

Now it’s time to add the delicious sauce. Pour in 1 tablespoon of soy sauce, 2 tablespoons of cooking wine, and 2.5 tablespoons of corn syrup (or oligosaccharide) into the pan. Use chopsticks or a spatula to gently toss and separate the squid strands, ensuring the sauce is evenly distributed. Stir-fry until the soy sauce mixture is well incorporated and the squid turns a nice golden-brown color, being careful not to burn it.

Step 5

Turn off the heat. Finally, drizzle in 1 tablespoon of sesame oil and sprinkle generously with 1-2 tablespoons of sesame seeds. The nutty aroma of sesame oil and the crunch of sesame seeds will further enhance the flavor. Mix everything well to finish your tasty stir-fried shredded squid.
