Soft and Savory Tofu Egg Pancakes – Perfect for Kids!
Simple and Nutritious Tofu Egg Pancake Recipe Your Child Will Love

Inspired by my husband’s idea, I made these thick and delicious tofu egg pancakes. Their soft texture and savory flavor were a perfect match for our family’s taste, and our son ate more than half of them! ^^ They are easy to make and great for breakfast or snacks.
Main Ingredients- 2 large eggs
- 1/2 block firm tofu
- 1/4 small onion
- 1/5 small carrot
- 0.7 stalk green onion
Cooking Instructions
Step 1
First, it’s important to drain the excess water from the tofu. A simple trick is to microwave the tofu for 1-2 minutes; this helps evaporate the moisture, making it easier to drain. You can also press it with paper towels to absorb any remaining liquid.

Step 2
Finely chop the drained tofu and all the prepared vegetables (onion, carrot, green onion). Finely chopping the vegetables ensures they mix well into the pancake batter and contribute to a smoother texture.

Step 3
Place the drained tofu in a large bowl. Using a spatula, fork, or spoon, mash the tofu until it’s smooth and there are no large lumps. Aim for a texture similar to mashed potatoes or grains of rice.

Step 4
Add 1 tsp of salt and a pinch of black pepper to the mashed tofu. Then, add the finely chopped vegetables and the 2 eggs. Whisk everything together quickly with a fork or spoon until just combined to form the batter. Avoid overmixing; just ensure all ingredients are evenly distributed.

Step 5
Heat a non-stick pan over medium heat, then add a little oil or butter. Spoon a portion of the batter into the pan, shaping it into a thick pancake. Once the batter is in the preheated pan, reduce the heat to low. Cook gently over low heat for 2-3 minutes, allowing the inside to cook through.

Step 6
If you find it difficult to flip the pancake without it breaking, you can place a large plate over the pan, then carefully flip the pan and pancake together onto the plate. You can then slide the pancake back into the pan to cook the other side.

Step 7
Cook the other side of the pancake over low heat for another 2-3 minutes. You’ll hear a gentle sizzle as it cooks, indicating it’s done and has a nice golden-brown color. And there you have it – delicious, soft, and savory tofu egg pancakes! ^^
