Let’s get started with this restaurant-style Eomuk Bokkeum, the savory glazed fish cake recipe!
Main Ingredients- 3 sheets of flat fish cakes (Eomuk, approx. 200-250g)
- 1 medium onion
- 30g carrot (about 1/4 medium carrot)
- 1/2 stalk green onion (scallion)
- Vegetable oil for sautéing
Seasoning Ingredients- 100ml water
- 3 Tbsp soy sauce
- 1 Tbsp corn syrup or oligodang (Korean rice syrup)
- 1 Tbsp toasted sesame seeds
- 100ml water
- 3 Tbsp soy sauce
- 1 Tbsp corn syrup or oligodang (Korean rice syrup)
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, prepare the fish cakes by cutting them into bite-sized pieces, about 1.5cm x 5cm, which is easy to eat and allows the sauce to penetrate well. Slice the onion thickly. Cut the carrot into similar thickness strips for uniformity. Slice the green onion diagonally to add a fresh aroma.
Step 2
Heat about 1-2 tablespoons of vegetable oil in a pan over medium-low heat. Add minced garlic and sauté until fragrant, creating a garlic-infused oil. Be careful not to burn the garlic. (You can omit garlic if unavailable).
Step 3
Once the garlic is fragrant, add the sliced onions and carrots and stir-fry them together. When the onions become translucent, add the cut fish cakes and stir-fry for 1-2 minutes, mixing everything well. Cook until the fish cakes become slightly softened.
Step 4
Now it’s time to add the delicious seasonings. Add 3 tablespoons of soy sauce and 1 tablespoon of corn syrup (or oligodang), and stir-fry to coat the fish cakes and vegetables evenly. Next, pour in 100ml of water. This water is the key secret to making the fish cakes tender and keeping them moist as they simmer.
Step 5
Adjust the heat to medium and let it simmer for about 3-5 minutes, or until the sauce thickens slightly. As the sauce reduces, it will beautifully coat the fish cakes and vegetables. Finally, add the diagonally sliced green onions and stir-fry briefly to infuse their aroma.
Step 6
Turn off the heat and sprinkle 1 tablespoon of toasted sesame seeds over the finished stir-fry for a final touch. The nutty flavor of sesame seeds adds even more deliciousness. Now, plate it up, and your tender and flavorful restaurant-style fish cake stir-fry, Eomuk Bokkeum, is complete and ready to be enjoyed at home!
